Swedish Meatballs with Lingonberries
INGREDIENTS
1 lb of ground beef - recommend using 80% lean, 20% fat
1 lb of ground pork
2 eggs
1/2 cup of panko breadcrumbs
1 medium size yellow onion
1 stick unsalted butter
3/4 cup heavy cream
3 tbsp whole milk
2 cups of beef broth
1 cup veggie broth
1 tbsp dijon mustard
2 tbsp Worcestershire sauce
1/2 cup flour
1 tbsp fresh lemon juice
1/2 tsp allspice
1 tsp powdered ginger
1 tsp nutmeg
2 cloves garlic
Salt & pepper
1 bag of small fingerling potatoes
Fresh dill
Fresh parsley
LINGONBERRIES - available on Amazon
Extra virgin olive oil, salt, pepper - on hand as needed
STEPS
1. Grab a cold glass of Orange Wine or a hard cider
2. Boil a large pot of salted water
3. Finely finely chop your onion and garlic cloves - set aside
4. In a large mixing bowl, toss in beef, pork, chopped onion & garlic (1 clove), panko crumbs, all spice, nutmeg, ginger powder, 2 eggs, whole milk, salt & pepper, MIX WELL & COMBINE WITH CLEAN HANDS
6. Form golf ball size meatballs and place on a baking sheet. While forming, heat 1-2 large nonstick skillets over low-med heat with olive oil & a little butter
7. Throw your fingerling potatoes into boiling water for about 7 min on medium heat - poke with fork to see when done! Once done, strain & set aside in bowl tossed with lots of butter, salt, pepper, and fresh dill
8. Place meatballs in the warm skillet making sure there is a little room between each meatball.
8. Cook meatballs for about 5 min on each side on medium heat. Once crispy looking & cooked through. Set aside.
9. In the same skillet or a new skillet on medium heat, put 3-4 tbsp butter - once butter starts to bubble, whisk in 3-4 tbsp of flour. Whisk for 1-2 min and then whisk in heavy cream, beef & veggie broth, dijon, lemon juice, soy sauce, garlic, salt & pepper. Add more if necessary for desired thickness & flavor!
10. Once the sauce tastes great and looks creamy, use tongs to toss your meatballs in the skillet and coat with the sauce.
11. FINALLY - you made it! Plate your meatballs, potatoes, and lingonberries with parsley & enjoy!
